CHEESE STUFFED BAKED POTATOES

Category: Twice Baked Potatoes

4 medium baking potatoes
1 cup grated sharp cheddar cheese
1/4 cup grated parmesan cheese
1/2 cup sour cream
2-4 tbsp unsalted butter
1/2 cup minced onion
2 clove garlic, minced
Salt and pepper

Scrub potatoes, poke with a fork and bake at 300 until soft. Allow to cool enough to handle. Split the potatoes in half and scrap out the pulp into a large bowl. Save the skins. Add the cheeses and next 4 ingredients and mash well. Stuff back into the potato skins. Bake for 30-40 minutes or until the stuffing has brown flecks and the potatoes are heated through. Serves 6

NOTE: Can be made a day ahead and reheated in the microwave.
