STUFFED MUSHROOMS V

12 large mushrooms, stems removed and chopped
1 tbsp olive oil
3 tbsp butter
1/2 onion, finely chopped
1 clove garlic, finely chopped
1/3 cup finely chopped celery
2 slices bacon, cooked, drained and crumbled
3 oz cream cheese, softened
2 tbsp chopped parsley
1/2 cup bread crumbs, approximately
Dash cayenne
Salt and pepper

Preheat oven to 375. Wipe mushroom caps clean with a damp cloth. In a skillet, heat oil and 1 tbsp butter. Add onion and celery cook for 1 minute. Stir in chopped mushroom stems and cook until soft, about 2 minutes. Stir in garlic, bacon and parsley. Toss to coat and cook another minute.

Remove form heat and add cream cheese and bread crumbs, 1/2 cups at a time. Add just enough bread crumbs so that mixture remains moist. Season and cool.

When cool enough to handle, stuff the caps. Place in a baking dish and drizzle with 2 tbsp melted butter. Bake 12-15 minutes or until heated through. Serve immediately.
