ORANGE CREAM CAKE

Category: Cakes from Cake Mixes

2 eggs, slightly beaten
1 cup sugar
Juice and grated zest of 1 orange and 1 lemon
1/2 pint heavy cream
1 2-layer sponge cake

On top of a double boiler, mix eggs, sugar, juices and zest. Cook over boiling water for about 10 minutes or until custard is thickened, stir occasionally. Cool thoroughly.

Whip the cream and fold into the custard into the cream. Cut the cake into layers. Fill and frost with custard fill. Refrigerate several hours or overnight before serving.
