1 (5 oz) pkg yellow rice
1 (12 oz) can Mexi-corn, drained
1 medium onion, chopped
1 (8 oz) can tiny English peas, drained
1 (2 oz) jar diced pimiento, drained
1 can cream of chicken soup
1 (8 oz) carton sour cream
1/4 cup butter, melted
1 (8 oz) water chestnuts, drained and sliced
1 cup grated sharp cheddar cheese

Cook rice according to package directions. Blend next 3 ingredients. Combine all ingredients except cheese. Pour into a casserole dish and bake at 350 for 25 minutes or until mixture is hot throughout. Top with grated cheese and return to oven 5 more minutes or until cheese is melted. Serves 8
