SHRIMP TOAST

Category: Deep Fried


1/2 lb chopped shrimp
5 water chestnuts, chopped
1 egg white
1/2 tsp soy sauce
1 tsp cornstarch
1/4 tsp fresh ginger, minced
8 slices white bread
Peanut oil for frying

Combine first 6 ingredients in a small bowl and mix thoroughly. Divide mixture into 8 portions. Spread each portion on bread slices. Heat oil to 325. Slip toast in hot oil, shrimp side up and fry until golden brown on both sides. Drain thoroughly on paper towels. Cut into squares or strips while still hot. Serve immediately or cool and freeze. Reheat at serving time.
