WILD RICE WITH MUSHROOMS AND ONIONS

2 tsp salt
1 pkg Uncle Ben's Wild Rice mixture
1 yellow onion, peeled and cut into 1/4 inch dice
3 tbsp butter or olive oil
1/2 lbs mushrooms, sliced
1/2 tsp freshly ground black pepper

Follow package directions to cook the rice. In the meantime, saute the onion in the butter or oil. When the onion becomes clear, add the mushrooms and saute for 5 or 6 minutes. When the rice is finished, stir in the mushrooms, onions, and black pepper. Correct the seasoning and serve hot.
