6 medium potatoes, diced
1 small onion, chopped
1 tsp crushed garlic
1/2 tsp oregano
1/4 tsp parsley
Salt and pepper, to taste
Heat oil in a pan over medium heat. Add potatoes and remaining ingredients. Fry until tender, stirring often.
