HERB WINE MARINADE
Category: Marinades
1 cup dry white wine
1/2 cup olive oil
1 tbsp white wine vinegar
1 clove garlic, crushed
1 small onion, sliced (omit for seafood)
1/2 tsp salt and pepper
1 tsp dried herb combination* (Use the herbs specified for specific choice of meat.)
Mix all ingredients together in dish to marinade food. Use for lamb, veal, chicken, shellfish and fish.
Lamb: thyme, parsley, rosemary and mint
Veal: marjoram, thyme, parsley, and sage
Chicken: marjoram, thyme, parsley and tarragon
Seafood: dill, marjoram, parsley and chervil
