Strawberry Crème Brûlée

Makes 6 servings.

8 egg yolks
⅓ cup sugar + ¼ cup sugar for tops
1½ cup heavy whipping cream
½ cup juice strained from 1 pint pureed strawberries
1 teaspoon strawberry extract

Heat oven to 300 F.

Whisk together egg yolks and ⅓ cup sugar until pale yellow. Whisk in cream until blended.

Puree strawberries and strain through a sieve. Stir in strained strawberry juice and extract. Pour into six small ramekins. Place ramekins in a casserole baking dish.

Create a water bath by filling the casserole dish with water to about halfway up the sides of the ramekins. Bake for 40-50 minutes or until the center is slightly set. Chill at least 3 hours or overnight.

Before serving, shake a thin layer of granulated sugar on top of each ramekin. Brown with a kitchen torch or place under the oven broiler until slightly golden.
