*HICKORY SPARERIBS WITH WHISKEY SAUCE*

8 lbs spareribs
1 tsp pepper, paprika, cayenne pepper, thyme and basil
4 clove garlic, pureed
1/2 cup hickory liquid smoke seasoning
2 tbsp olive oil
Sauce
3 tbsp butter
1 celery stalk, chopped
1 large onion, chopped
2 cloves garlic, smashed and chopped
4 tbsp flour
3 cups beef stock, heated
1/4 cup vinegar
1 (5 1/2 oz) can tomato paste
1/4 cup brown sugar
3 tbsp whiskey
Salt and pepper
Place ribs in a pan containing boiling water. Cook 18 minutes. Remove from pan and pat dry. Combine remaining ingredients and brush over ribs and marinate 14 minutes.
Preheat oven to 350. Make sauce: Melt butter and add vegetables and garlic; cook 6 minutes. Add flour and mix well. Cook 5 minutes over low heat and incorporate the next 4 ingredients. Mix well and season with salt and pepper. Cook sauce for 16 minutes on low heat. Mix in whiskey.
Arrange ribs in a large baking dish and pour sauce over and cook for 45 minutes. Turning ribs occasionally during baking and brush with sauce.
