BEEFY NOODLE EGGPLANT CASSEROLE

1 large eggplant, chopped in small pieces
1 large onion, chopped
2 clover garlic, minced
2 tbsp butter
2 lb ground meat
1 box of Rotini noodles
1 large jar favorite spaghetti sauce
1/4 cup Parmesan cheese
mozzarella cheese

Brown and drain meat. Set aside. Saute eggplant and onion in butter. When onions are transparent and eggplant is soft, add the garlic, cook for 5 minutes.

Combine ground meat and eggplant mixture together and cook for about 15 minutes on medium heat. Add the sauce and mix well. Cook noodles as directed. Drain but do not rinse.

Add the Parmesan cheese and mix well once more. Pour combined mixture into a 13x9 inch baking dish. Bake at 350 for 1 hour. After 1 hour, remove from oven and add mozzarella cheese and bake just until cheese is melted. Serves 6-8.
