GARDEN PASTA SAUCE

2 tbsp olive oil
1 clove garlic, minced
1 small eggplant, unpeeled, cut into 1/2-inch cubes (about 2-1/2 cups)
4 plum tomatoes, peeled and chopped
1 (6 oz) can tomato paste
1 tsp dried basil
1/2 tsp dried oregano
1/4 tsp salt
1/8 tsp black pepper
2 cups zucchini, thinly sliced
Hot cooked pasta
Grated Parmesan cheese (optional)
Chopped fresh parsley (optional)
Warm the oil in a large skillet over medium-high heat. Add garlic and cook 60 seconds. Stir in tomato paste, tomatoes, eggplant, oregano, basil, salt and pepper but hold off on the zucchini for now.
Cover the pan and simmer for 15 minutes, stirring several times. Mix in the zucchini. Put the lid on the skillet once again, and simmer for 10 minutes, stirring occasionally. Pour the sauce over your choice of pasta, and sprinkle the Parmesan cheese on top. Garnish with fresh parsley
