FRIED GREEN TOMATOES

2 medium green tomatoes
1/4 cup self-rising flour
1/4 cup cornmeal
1/2 tsp salt
1/2 tsp garlic salt
1/2 tsp ground red pepper
1/2 tsp cracked black pepper
1 cup buttermilk
1 cup vegetable oil, lard or bacon drippings
Hot sauce (optional)

Begin by cutting the tomatoes. Be sure to make the slices no larger than 1/4 an inch thick. Combine the dry ingredients (flour, cornmeal, salt, garlic salt, black and red pepper) in a shallow bowl, such as a pie plate, and mix them well. Pour the buttermilk into a separate shallow dish.

Next, heat the vegetable oil or lard in a large skillet using medium heat. As the oil is warming, dunk the tomato slices in the dish of buttermilk, coating both sides. Then, dip the tomato in the flour mixture and shake off excess. Place the tomato slices in hot oil, and cook for three to five minutes on each side. When they're done cooking, put them on wax paper or paper towels, and serve immediately. Serves 2-4
