FIESTA BAKE

1 lb ground beef
1 small chopped onion
3/4 cup garden style salsa
1 (1 1/4 oz) pkg taco seasoning mix
1/4 cup water
1 cup whole kernel corn
1 (2 1/4 oz) can sliced ripe olives, drained
1 (8 1/2 oz) pkg corn muffin mix
1 cup shredded cheddar cheese
1 (4 oz) can diced green chilies

Cook beef and onion in med. skillet over med. high heat until beef is no longer pink; drain. Stir in salsa, taco seasoning mix and water. Bring to a boil. Reduce heat to low; cook 5 minutes or until mixture is thickened. Stir in corn and olives. Spoon into ungreased 8 inch baking pan.

Prepare batter for corn muffin mix according to pkg directions. Stir in cheese and chilies. Stir until smooth; spread over meat mixture. Bake, uncovered, at 350 for 30 to 35 minutes or until crust is golden brown. Top with additional salsa, if needed. Serves 6
