SPICY MONTEREY RICE

Category: Rice/Risotto

2 cups water
1 cup uncooked white rice
3 packets chicken bouillon
2 cups sour cream, room temperature
6 oz shredded Colby cheese
4 oz shredded Monterey jack cheese
1/2 cup chili pepper, canned and chopped
1/2 red bell pepper, chopped
1/8 tsp pepper

Preheat oven to 350. In a saucepan, combine first 3 ingredients and bring to a boil. Reduce heat, cover and simmer for 15 minutes or until rice is tender.

In a large bowl, combine remaining ingredients except 1/2 cup Colby cheese and stir in rice. Pour into a butter 1 1/2 quart casserole dish. Bake for 20-25 minutes and top with remaining cheese. Bake for 3 minutes longer or until cheese melts. Let stand 5 minutes before serving.
