CELEBRATION CAKE

Cake
2 3/4 cups flour
2 cups sugar
1 tsp cinnamon and baking soda
1/2 tsp salt
3 eggs, slightly beaten
1/2 cup coconut
1 cup crushed pineapple with juice
1 1/2 cups chopped pecans
1 tsp vanilla extract
3/4 cup oil
2 medium bananas, chopped

Frosting
1 (3 oz) pkg cream cheese, softened
2 tbsp butter
3 cup confectioners sugar or more if needed
1 tsp vanilla extract
Chopped pecans

Preheat oven to 325. Mix together in the order given. Stir but do not beat. Mix well and bake in a greased and floured Bundt pan for 1 hour or until toothpick inserted into center comes out clean. Cool 10-15 minutes before removing from pan. Frost and sprinkle with pecans.

Frosting: Beat together first 4 ingredients until fluffy.
