ITALIAN SHRIMP FETTUCCINE

2 tbsp olive oil
1 cup sliced mushrooms
4 green onions, sliced
1 tbsp minced garlic
2 (14.5-oz) cans diced tomatoes, undrained
1/2 cup chopped fresh parsley
1/4 cup white wine
8 oz fettuccine
1/2 lb shelled, deveined uncooked medium shrimp
2 tbsp lemon juice
In large skillet, heat oil over medium heat until hot. Add mushrooms, green onions and garlic; saute 1 to 2 minutes. Stir in tomato, parsley and wine. Bring to a boil. Reduce heat; simmer 18 to 20 minutes to allow flavors to blend.
Meanwhile, cook fettuccine according to pkg directions. Drain. Add shrimp and lemon juice to tomato mixture; cook 1 to 2 minutes or until shrimp turn pink. Serve over fettuccine or rice. Serves 4
