QUICHE STUFFED MUSHROOMS

2 lb fresh mushrooms stems removed and chopped
5 slices bacon
6 tbsp butter
2 tbsp minced onion
2 eggs, lightly beaten
1 cup heavy cream
2 3/4 cups shredded Swiss cheese
3/4 tsp salt
In a large skillet, saute bacon until crisp, drain on paper towels, crumble and set aside. Pour drippings from skillet. Melt butter in same skillet and brush outside of mushroom caps with some of the melted butter.
Place caps in a shallow baking pan. To remaining butter in skillet, add onion and saute for 2 minutes. Add reserved mushroom stems; saute 2 minutes longer. Remove from heat.
In a bowl, combine eggs, and remaining ingredients. Stir in bacon and mushroom mixture. Fill caps. Bake at 350 for 30 minutes.
