TORTELLINI SOUP

2 tbsp olive oil
1 medium onion, chopped
2 stalks celery, chopped
3 carrots, chopped
2 (14-1/2 oz each) cans diced tomatoes, undrained
2 tbsp balsamic vinegar
2 cloves garlic, chopped
1/4 tsp dried oregano, basil, salt and pepper
4 cups water
3 (10-1/2 oz each) cans condensed chicken broth
1 (19 oz) pkg frozen or refrigerated tortellini, any flavor
1 (10 oz) pkg frozen spinach, thawed and drained or 1 bunch escarole, chopped
Shredded parmesan cheese

In a large soup pot, heat the oil over medium-high heat. saute the vegetables until tender, then add the next 7 ingredients; cook for 5 to 7 minutes, or until heated through. Stir in the water and broth and bring to a boil. Add the tortellini and spinach and cook for 6 to 8 minutes, or until the tortellini are tender. Ladle into bowls, top with cheese. Serve immediately. Serves 8-10
