FRIED CHEESE SQUARES

1/4 cup butter
1/3 cup flour
1/4 tsp ground nutmeg
1/8 tsp pepper
1 1/2 cups milk
3 egg yolks, beaten
2 cups shredded Gruyere or Swiss cheese
1/2 cup parmesan cheese
1 (6 oz) pkg frozen cooked shrimp, thawed, drained and chopped
3 egg whites
1 cup fine dry bread crumbs
Oil for deep frying

In a 2-quart saucepan, melt the butter. Blend in the next 3 ingredients. Add milk. Cook and stir until thickened and bubbly. Cook 1 minute more. Stir about 1/2 cup of hot mixture into beaten yolks. Return all to saucepan. Cook and stir until bubbly. Add cheeses; stir until melted. Remove from heat. Stir in shrimp.

Line a 9 inch square pan with plastic wrap or foil. Spread mixture in pan. Cover with plastic wrap. Place in freezer until firm. Lift ends of plastic wrap to remove mixture from pan. Cut mixture into 1 inch squares. Beat egg whites with 1 tbsp water until frothy. Dip shrimp squares in egg whites then in the bread crumbs.. Transfer the squares to a moisture-and-vapor proof container; freezer until needed or cook immediately.

At serving time, arrange squares on a platter. Heat oil in a saucepan to 365 degrees. Place cheese squares in the oil and cook about 2 minutes or until golden. Transfer onto a paper towel line platter to drain. Serve with cocktail sauce. Serves 6
