STRAWBERRY BREAD WITH STRAWBERRY BUTTER

3 1/4 cups flour
1 3/4 cups sugar
1/2 tsp cinnamon
1 tsp salt
1 tsp baking soda
3 eggs, lightly beaten
1 cup plus 2 tbsp oil
2 (10 oz) pkg sliced frozen strawberries and their juice
1 1/4 cups chopped walnuts (optional)

Strawberry Butter
1/2 cup butter, softened
1 (10 oz) pkg strawberries, thawed and drained
3 tbsp confectioners sugar

Mix flour, sugar, cinnamon, salt and baking soda in a large bowl.

Add eggs, oil and strawberries and blend well (Do not use a mixer.)

Pour into 2 greased and floured loaf pans.
Bake at 350 degrees for 50-60 minutes.

For Strawberry Butter, mix all ingredients with a wire whisk until thoroughly blended. In cool weather it helps to place the bowl in a pan of hot water while whisking so the butter will be soft enough to blend with the strawberries.
