ROCKY ROAD BARS

Base
2/3 cup butter
4 (1 oz) squares unsweetened chocolate
2 cups sugar
4 eggs
1 tsp vanilla
1 1/4 cups flour
1 tsp baking powder and salt

Topping
1/4 cup butter
1 (1 oz) square unsweetened chocolate
1/3 cup evaporated milk
1/4 cup sugar
1 3/4 cup confectioners sugar
1/2 tsp vanilla
1/3 cup creamy peanut butter
1 cup miniature marshmallows

Preheat oven to 350. Grease 13x9 inch baking pan. Base: Melt butter and chocolate in a saucepan, stirring until smooth. Remove from heat and stir in sugar. Add eggs, one at a time. Stir quickly into hot mixture. Stir in vanilla. Combine dry ingredients and gradually stir into chocolate mixture. Spread in pan and bake for 30 minutes.

Topping: Start preparation 5 minutes before base is finished baking. Melt butter and chocolate in a saucepan, stirring until smooth. Remove from heat and stir in sugar. Add milk and sugar. Stir until well blended and sugar dissolves. Remove from heat.

Beat in confectioners sugar and 1/2 tsp vanilla. Drop peanut butter by tspfuls on top of hot chocolate mixture. Swirl through with tip of knife. Sprinkle marshmallows over hot baked base. Pour chocolate mixture over marshmallows. Cover pan immediately with foil. Cook and cut into bars.

NOTE: If topping becomes too firm to pour, reheat on low.
