*SAUSAGE CHEESE BALLS*

3 cups baking mix
1 lb bulk Italian sausage
4 cups shredded cheddar cheese or
1/2 cup grated parmesan cheese
1/2 cup chopped onion and celery
1/2 cup milk
1/2 tsp dried parsley, rosemary and garlic powder
Barbecue sauce or chili sauce, for dipping, optional

Preheat oven to 350. Lightly grease bottom and sides of a jelly-roll pan. Stir together all ingredients and shape into 1 inch balls. Place in pan. Bake 20-25 minutes or until brown.

Immediately remove from pan. Serve with sauce for dipping.

Variation: For Texas style, use pepper jack cheese and add 1 cup frozen chopped spinach, thawed and squeezed dry, 1 jalapeno pepper, finely chopped, seeds removed, optional
