Hickory chunks
2 tbsp dried rosemary, paprika, pepper and dried garlic flakes
1 tsp salt
1 (7 lb) boneless beef brisket, untrimmed
Favorite barbecue sauce
Buns
Pickles

Soak wood chunks in water at least 1 hour. Prepare charcoal fire in smoker; let burn 15-20 minutes.

Combine rosemary and next 4 ingredients; rub on brisket.

Drain wood chunks and place on coals. Place water pan in smoker; add water to depth of fill line.

Place brisket on lower food grate; cover with smoker lid. Smoke 3 1/2 hours or until meat thermometer inserted registers 155. Let rest 10-15 minutes when you take it off the smoker.

Slice and serve with remaining ingredients.
