SOUR CREAM BANANA BARS

Category: Bars

Bars
1 1/2 cups sugar
1 cup sour cream
1/2 cup margarine, softened
2 eggs
1 1/2 cups mashed bananas (about 3 large bananas)
2 tsp vanilla extract
2 cups flour
1 tsp salt
1 tsp baking soda
1/2 cup chopped walnuts

Frosting
1/4 cup butter
2 cups confectioners sugar
1 tsp vanilla extract
3 tbsp milk

Preheat the oven to 350. Grease and flour a 15 x 10 inch baking dish. Cream together the granulated sugar, sour cream, and margarine. Mix in the eggs one at a time on low speed.

Beat in the bananas and vanilla, scraping the sides of the bowl occasionally. Add the flour, salt, and baking soda. Beat on medium speed for 1 minute. Stir in the nuts. Spread the batter evenly into the prepared pan. Bake for 20 to 25 minutes, until the center is done. Set aside to cool.

To prepare the frosting, lightly brown the margarine in a saucepan, stirring to prevent burning. When lightly browned, remove from the heat. Beat in the confectioners sugar, vanilla, and milk. Pour over the bars.
