CORN BREAD COATED PORK CHOPS

1 (6 oz) box corn bread stuffing mix, with seasoning packet
1/2 cup fresh parsley, chopped
4 center cut pork chops, 3/4 inch thick
1/4 cup low fat yogurt

In a food process pulse briefly corn bread stuffing mix and parsley just until slightly ground. Combine the stuffing with seasoning packet if included in a shallow baking dish and spread out evenly. Brush both sides of chops with the yogurt. Dip both sides of the chops in the stuffing mixture. Place on greased baking pan. Bake at 400 for 45 to 50 minutes
