HERB ROASTED PORK CASSEROLE

1/2 cup butter
4 medium red potatoes, cut into 1 inch pieces
1 lb pork roast, cut into 1inch pieces
1/2 tsp salt, crushed rosemary leaves, pepper and sage
1 tsp minced fresh garlic
2 cups crumbly style herb seasoned stuffing
2 stalks celery sliced 1/2 inch
1 cup chopped red onion
1/2 cup apple juice
1/4 cup fresh parsley
2 medium ripe tomatoes, cut into 1 inch pieces

In skillet melt 1/4 cup butter until sizzling; add potatoes. Cook over med. high heat, stirring occasionally, until potatoes are lightly browned. Add pork, salt, rosemary, pepper, sage and garlic. Continue cooking, stirring occasionally, until meat is browned. Add remaining 1/4 cup butter and remaining ingredients except parsley and tomatoes. Cover; cook until heated through. Stir in parsley and tomatoes. Cover; let stand 2 minutes or until heated through.
