Mexican Chip Dip

1 pound ground beef
1 pkg taco seasoning
1 cup diced onion
2 (4 ounce) cans chopped green chile peppers or 2 chopped jalapeno or poblano peppers
1 (16 ounce) jar salsa, medium to hot
2 (16 ounce) cans refried beans
1 (2 ounce) can sliced black olives, drained
2 (8 ounce) packages cream cheese, sliced
1 pkg taco seasoning
8 oz container sour cream
2 cups shredded Mexican Cheddar cheese
1 can Rotel diced tomatoes, drained

Preheat oven to 400 degrees.

Place ground beef, taco seasoning, onions and chopped peppers in a large, deep skillet. Cook over medium high heat until onions are soft and ground beef is evenly brown. Remove from heat.

Drain beef and mix in salsa, refried beans, and black olives. Transfer mixture to a 9x13 inch baking dish.

Mixed the cream cheese with the sour cream and taco seasoning, layer the mixture on the top and spread it on top of the mixture. Top with the cheese. Bake until cheese has melted and the dip is bubbly. After taking out of the oven, top with diced tomatoes.
