1 cup milk
2 1/2 lb shredded pepper jack cheese
1 (10 oz) pkg frozen chopped spinach, thawed, and water squeezed out
1 (4 oz) jar diced pimento, well drained
1 cup finely diced yellow onion
1 cup finely diced tomato
Melt cheese in a double boiler. Add remaining ingredients. Mix thoroughly and remove from heat.
