WONTON WRAPPED TERIYAKI ROCK SHRIMP

1 tbsp plus extra olive oil
1 lb rock shrimp
Juice of 1/2 lemon
Salt and pepper
6 small green onions, thinly sliced
1/4 cup teriyaki sauce
2 tbsp sesame seeds, toasted
36 small round wonton wrappers
Preheat oven to 400. Heat 1 tbsp olive oil in a skillet. Add the shrimp and lemon juice. Season with salt and pepper. Cook until the color changes, 3-5 minutes. Remove from heat.
When cool, transfer to a cutting board and chop coarsely. Transfer to a bowl and add the green onion and teriyaki sauce. Brush a large baking dish lightly with olive oil.
Arrange the wrappers on the baking dish and brush each wonton lightly with olive oil. Place 1 tsp shrimp mixture in the center of each wonton. Fold over and gently press the edges together. Brush on additional olive and sprinkle with sesame seeds. Bake until crispy and light brown, 5-7 minutes. Serve while.
NOTE Can make up to 1 day in advance and bake as directed to reheat before serving.
