PARMESAN POTATO GRATIN

Category: Au Gratin and Scalloped

4 large russet potatoes peeled and thinly sliced
1 tsp salt and pepper
1 large clove garlic finely chopped
6 tbsp freshly grated parmesan cheese
1 1/2 cups chicken stock

Preheat oven to 400. Lightly grease oval gratin dish and arrange a layer of potatoes on bottom. Sprinkle with salt, pepper, 1/3 garlic and 2 tbsp cheese. Repeat twice more and pour over stock. Bake 45 minutes stirring potato mixture every 20 minutes or so or until potatoes are tender. Place under broiler for 4 minutes or until top becomes golden brown.
