GRILLED CAESAR CHICKEN SANDWICH

3 boneless chicken, breast halves
2 1/2 tbsp olive oil
3 tbsp fresh lemon juice
1 1/2 tsp Herbes de Provence
1 clove garlic, pressed
1 loaf French bread, or a good crusty focaccia
Romaine lettuce
Red onion and tomatoes, sliced
Caesar salad dressing, to taste
Pound chicken breasts between sheets of plastic wrap to 3/4 inch thickness. Combine oil, juice, herbs and garlic in resealable plastic bag. Add chicken to bag & marinate 2-6 hours. Grill chicken, cool, and cut into slices. Cut bread horizontally in half. Pull out and discard soft interior crumbs from top half leaving a 1/2 inch thick shell. Drizzle dressing over inside of top and bottom. Layer onion, tomato, lettuce and then chicken. Top with top half of bread and weight down the sandwich. Cut into quarters to serve.
