BLUE CHEESSE SAUCE for Burgers and Steaks

2 cups whole milk
2 tbsp unsalted butter
1 small Spanish onion, chopped
2 tbsp flour
1/4 tsp kosher salt
Pinch cayenne pepper
4 oz crumbled blue cheese (about 1 cup) plus extra for garnish
2 tbsp finely chopped fresh chives
Bring milk to simmer over low hear in a small saucepan. Heat butter in medium. saucepan over med. heat. Add onion to butter and cook til soft, about 5 minutes. Whisk in flour and cook 1 minutes. Slowly whisk in the warm milk and whisk til mixture thickens, about 2 minutes. Season with salt and cayenne pepper and continue cooking, whisking occasionally for 5 minutes. Remove from heat and stir in the cheese. Thin with milk if sauce is too thick. Sprinkle with chives.
