HOISIN CHICKEN

4 whole skinless boneless chicken breasts cut into small serving sized pieces.
1/2 cup plus 1 tbsp cornstarch
2 tsp grated fresh ginger
2 medium yellow onions chopped
8 oz fresh broccoli cut into 1 inch pieces
1 red or green bell pepper chopped
2 (4 oz) cans of whole button mushrooms drained
1 cup water
3 tbsp dry sherry, cider vinegar and hoisin sauce
4 tsp soy sauce
2 tsp instant chicken bouillon granules
oil for frying
Place the 1/2 cup cornstarch in a large bowl and add the chicken pieces. Toss to coat well heat oil in wok or large skillet over high heat to 375. Add chicken slowly 1/3 at a time and cook until golden brown and cooked thoroughly about 5 minutes drain on paper towels. Remove all but 2 tbsp oil from wok or skillet. Add ginger and stir fry 1 minute. Add onions stir fry 1 minute. Add broccoli red pepper and mushrooms stir fry for 2 minutes. Ccombine remaining ingredients and 1 tbspcornstarch in small bowl. Add to wok cook and stir until sauce boils and thickens. Add chicken back into mix heat through and serve.
