CAJUN MEATLOAF

Category: Meatloaf

1 lb lean ground beef
1/2 cup chopped celery, onion and green or red bell pepper
1/2 cup bread crumbs
2 egg whites
1 tbsp Worcestershire sauce
1/2 tsp pepper and cumin
1/4 tsp ground red pepper

Preheat oven to 350. In a bowl, combine ingredients until combined. Shape into a loaf and place in a shallow baking pan. Bake, uncovered, for 45 minutes or until no longer pink. Let stand for 5 minutes in pan. Drain off fat and remove from pan. Cut into slices.

NOTE: I like to pan the meatloaf with paper towels to soak up some of the oil.
