SPICY DEVILED EGGS

6 large eggs, hard-cooked
1 1/2 tsp fresh lime juice
1 tsp honey
1/4 tsp salt
1/2 jalapeno chile, seeded and minced
1 tbsp minced fresh cilantro
1 tbsp unsalted butter; softened
1/4 cup mayonnaise

Shell eggs, cut lengthwise in half and put egg yolks in a small bowl. Set egg whites aside.

Add remaining ingredients to the yolks, except the mayonnaise. Mash well. Be sure honey is well distributed. Stir in mayonnaise and taste to see if more lime and salt is needed.

Spoon mixture into the egg whites and refrigerate 2 hours. Bring to room temperature before serving. Serves 6
