3 pkg (8 oz) cream cheese, softened, divided
3 tbsp chopped pimento-stuffed green olives
2 tsp olive juice
1 cup shredded sharp cheddar cheese
1 tbsp mayonnaise
1 tsp grated onion
1 (2 oz) jar diced pimento, drained
4 tbsp butter, softened
2 cloves garlic, minced
1 tsp. dried Italian seasoning
Assorted crackers and seedless grapes
Whip 1 pkg of softened cream cheese at medium speed until creamy. Stir in chopped olives and olive juice; stir until well blended.
Line a loaf pan with plastic wrap. Spread olive and cream cheese mixture in bottom of lined pan (first layer).
Whip second pkg of softened cream cheese at medium speed until creamy. Add shredded cheese and mayonnaise; beat until blended. Stir in grated onion and diced pimento. Mix well and spread over olive and cream cheese mixture (second layer).
Whip remaining pkg of softened cream cheese and butter at medium speed until creamy. Add minced garlic and Italian seasoning. Beat until well blended. Spread over cheese and pimento mixture (third layer). Cover and chill for at least 3 hours before serving (best overnight).
To serve, invert onto a serving platter and remove plastic wrap. Serve with assorted crackers and seedless grapes.
