*SUN-DRIED TOMATO CREAM CHEESE SPREAD*

6 dry-packed sun-dried tomatoes
1 (8 oz) pkg cream cheese, softened
2 oz brie cheese, rind removed
1/2 tsp dried basil
2 tbsp olive oil
1/4 tsp salt and pepper
Fresh basil, garnish

Place tomatoes in a small bowl and add hot water to cover. Soak about 15 minutes, until the tomatoes are soft. Drain and discard the liquid.

Combine the cream cheese, brie and sun-dried tomatoes in a food processor. Process until the mixture is smooth. Add remaining ingredients and whip until fluffy. Place in a serving bowl and garnish with basil. Serve at room temperature.

NOTE: Can be made and stored in refrigerator up to 2 weeks. Bring to room temperature before serving.
