BEER CHILI

Category: Chili

1 lb ground beef
1 lb ground pork or sausage
1 medium onion, chopped
1/2 cup chopped green bell pepper
1 tsp minced garlic
1 bottle beer
1/4 cup cold coffee
3 tbsp chili powder
1 tsp oregano
1/2-1 tsp ground cumin, dried marjoram and dried thyme
3 can beans, I mix with pinto, chili and kidney
1 can tomato sauce
1/4 cup tomato paste
1 cup salsa
1 cup beef stock
1 tbsp red wine vinegar
Salt and pepper, to taste

Sauge meat, onion and bell pepper until onions are transparent. Add remaining ingredients and stir to combine. Bring to a boil and reduce heat to low. Cook, uncovered, for 1-2 hours, stirring often.

Note: For a chunkier chili, I like to substitute stew meat for the ground meat.
