ORANGE WALNUT BREAD FRENCH TOAST

2 eggs
1/2 cup oil
4 cups flour
1 2/3 cup sugar
1/2 tsp salt
2 tbsp baking powder
1 orange, unpeeled
1 cup chopped walnuts
1 1/2 cups milk
Butter and flour for baking pans

Beat eggs and gradually add oil. Beat for 1 minute. Sift dry ingredients and add to egg mixture. Cut the orange into pieces and place in blender at high speed until finely chopped. Add to batter. Slowly beat in milk and continue beating for 2 minutes. Turn into 2 loaf pans that have been buttered and floured. Let stand for 20 minutes.

Sprinkle nuts on top of loaves before baking. Bake for 20 minutes at 400 or until the dough has started to brown. Reduce temperature to 300 and score top of bread lengthwise. Bake 40 minutes more until toothpick comes out clean. Let stand in pan on edge for 10 minutes before turning out.

French Toast: Cut the cooled bread into 1 1/2 inch slices and soak in egg/cinnamon mixture. Cook on griddle over medium-high heat until brown. Turn once.
