*TORTELLINI AND SUN-DRIED TOMATO SALAD

8 oz jar sun-dried tomatoes, packed in oil, undrained
1 large tomato, chopped
1/3 cup olive oil
1 tbsp lemon juice
2 clove garlic, minced
1 tsp pepper
1/2 tsp salt
8 oz jar marinated artichokes, drained and chopped
4 oz whole cashews
1 lb cheese-filled tortellini, cooked al dente, drained
Drain tomatoes, reserving 1 tbsp oil. Chop and set aside. Combine reserved oil, olive oil and next 4 ingredients. Stir in remaining ingredients; toss lightly. Let salad stand at room temperature for 1 hour at room temperature or refrigerate overnight before serving.
NOTE: Great with grilled chicken.
