CHILI SALSA BEEF

1 1/2 lbs boneless chuck, trimmed and cut into 1 1/4 inch pieces
1 tbsp olive oil
1 cup medium or hot salsa
2 tbsp packed brown sugar
1 tbsp soy sauce
1 clove garlic, minced
1/3 cup coarsely chopped fresh cilantro
2 tbsp lime juice
2 cups hot cooked rice
Cilantro sprigs and lime quarters, garnish

In a Dutch oven, heat oil over medium heat until hot. Add beef in small batches and brown evenly, stirring occasionally. Pour off drippings. Stir in salsa and next 4 ingredients and return beef to pan. Bring to a boil; reduce heat to low. Cover tightly and simmer for 1 hour.

Remove cover; continue cooking, uncovered, 30 minutes longer or until beef is tender. Remove from heat; stir in chopped cilantro and lime juice. Spoon mixture over rice. Garnish. Serves 4
