SPAGHETTI AGLIO OLIO WITH TOMATOES AND BASIL

1 lb tomatoes, cut into 1/4 inch dice
1/2 cup shredded fresh basil, loosely packed
Salt and freshly ground pepper
12 oz spaghetti
1/4 cup fruity extra virgin olive oil
3 large cloves garlic, thinly sliced
1/4 cup freshly grated Asiago cheese
In a large serving bowl, toss together the tomatoes and basil. Season with salt and a generous amount of pepper. Spread the tomatoes in an even layer in the bottom of the bowl. Cook the spaghetti according to the pkg instructions until al dente. Drain well and place on top of the tomatoes.
In a small skillet, heat the oil and garlic over medium-high heat. Cook, stirring, for 1 minute or until the garlic is golden. Immediately pour the garlic oil over the pasta and toss until mixed well. Sprinkle with Asiago and serve. Serves 4. NOTE: Thin linguine works well in this recipe instead of spaghetti.
