COUNTRY CHICKEN WITH A SHERRY CREAM SAUCE

1 cup carrots, thinly sliced
2 tbsp butter
1/4 cup green onion, sliced
2 tbsp flour
1 1/2 cups chicken broth
1/2 cup whipped cream
2 tbsp sherry
1/8 tsp pepper
6 boneless, skinless chicken breasts
2 oz ham, cut into thin strips
In a skillet, saute carrots in butter for 5 minutes or until crisp-tender. Add onions and saute for 30 seconds. Sprinkle flour over vegetables and stir until blended. Add broth, cream, sherry and pepper. Stir and bring to a boil and continue to boil for 5 minutes or until thickened and slightly reduced.
Place chicken in skillet. Reduce heat to low, cover and simmer for 5 minutes. Turn chicken; cover and cook for 3-5 minutes longer or until cooked through. Transfer chicken to serving platter; cover with sauce and garnish with ham. Serve remaining sauce separately.
