GARLIC AND SHRIMP PASTA TOSS

1 lb shrimp, peeled and deveined, leaving tails on. Pat dry with paper towel. Refrigerate until ready to grill.
1 large garlic bulb roasted on grill (ends cut off, drizzled in oil and loosely wrapped in foil and grill for 30 minutes
1 tbsp olive oil
2 tbsp lemon juice
1 red or yellow bell pepper, quartered
1 onion, cut into 1/2 inch slices
3 cups pasta, cooked al dente
1/2 tsp salt and pepper
1/3 cup parmesan cheese

Loosely thread shrimp and vegetables on skewers. Combine 1 1/2 tsp olive oil and 1 tbsp lemon juice and brush shrimp with mixture. Grill indirect heat over a drip pan, 8-10 minutes turning halfway through grilling. Remove the shrimp skewers and garlic bulb from the grill. Allow the garlic to cool slightly. Coarse chop vegetables. Squeeze garlic in a bowl and mash. Add butter, salt and pepper; mix well.

In a large bowl, combine pasta and garlic mixture. Toss to coat. Add shrimp and vegetables; remaining lemon juice and cheese. Toss gently to mix then serve. Serves 4
