LOUISIANA SPICY HASH PROWNS

Category: Hash Brown Potatoes/Casseroles

5-8 medium baking potatoes, cut into 1 inch cubes
1 bunch chopped green onions
1/2 bunch chopped parsley
1 large yellow onion, chopped

Boil potatoes at least 30 minutes until soft. Drain well; stir in remaining ingredients. (You can store this in the refrigerator overnight before cooking.) Brown in skillet at least 30 minutes, using oil and sprinkling with Cajun spice mix at least twice.
