APPLE SMOKED TURKEY BREAST

3 cups apple wood chips, soaked in water at least 30 minutes
3-4 lbs bone-in turkey breast
1 tbsp vegetable oil
1/4 tsp salt and pepper
Brush grill rack with vegetable oil. Heat goals for indirect heat. Brush turkey with oil. Sprinkle with salt and pepper. Insert barbecue meat thermometer so tip is in the thickest part of the breast and doest not touch bone. Arrange hot coals around edge of fire. Drain wood chips and place 1 cup directly on the coals. Place a foil pan under grilling area, fill with 3 cups water.
Cover and grill turkey, skin side up, over drip pan. Cook on low heat 2 1/2 - 3 hours, adding charcoal and wood chips every hour and water in drip pan when necessary, until thermometer reads 170 degrees and juice of turkey is no longer pink when center is cut. Serve with Peppery Apple Sauce.
Peppery Apple Sauce
2/3 cup apple jelly
1 tbsp cider vinegar
1/2 tsp cayenne pepper
1 tsp dried parsley flakes
Mix first 3 ingredients in a saucepan. Cook over low heat about 5 minutes, stirring occasionally, until jelly is melted. Stir in parsley.
Variation: Cranberry Glazed – Make a spice mix by mixing together 1 tbsp each: brown sugar, onion powder, pepper, paprika, celery salt and rubbing it on the turkey by lifting skin and rubbing on meat as mush as possible and then drenching it in cranberry juice concentrate. In drip pan with water, add: 2 quartered onions, red wine, heat of garlic, 3 bay leaves Follow above smoking directions but baste the turkey with the cranberry juice every 2-3 hours.
For a whole turkey, place the onion quarters inside and smoke 8-12 hours, depending on the size of the bird.
