CARAMEL COOKIE BAR

1 cup oatmeal and flour
1/2 tsp baking soda
3/4 cup sugar
1/2 cup butter
1 cup butterscotch or chocolate chips
1/3 cup evaporated milk
1/2 cup chopped nuts, optional
1 (14 oz pkg caramels, unwrapped

Preheat oven to 350. Combine first 3 ingredients. In a separate bowl, mix sugar and butter until fluffy. Add the dry mixture. Set aside 1 cup of crust mix. Pat remaining mixture in a 13x9 inch baking pan and bake for 10-12 minutes. Cool for 15 minutes.

In a saucepan, add milk and caramels. Cook over low heat, stirring occasionally, until smooth. Spread over crust mixture, top with nuts, butterscotch pieces. Sprinkle reserved crust mix over top and bake for 20 minutes or until topping turns a golden brown color.
