CHEESY MEATROLL

1 1/2 lbs ground beef
1/8 tsp pepper
2 eggs, one at a time, beating after each addition 3/4 cup cracker crumbs
1/2 cup finely chopped onion
2 (8 oz) cans tomato sauce
2 tbsp grated parmesan cheese
1 tsp salt
1/2 tsp oregano
2 cups shredded sharp cheddar cheese or mozzarella cheese
Grated parmesan cheese

Combine first 7 ingredients. Mix well and shape into a flat rectangle on waxed paper. Roll with a rolling pan. Sprinkle cheese evenly over top and roll up in a jelly-roll fashion, using waxed paper to help. Bake at 350 for 1 hour. Drain off fat. Pour with remaining sauce and sprinkle with parmesan cheese. Bake an additional 15 minutes.
