BAKED SPINACH-PARMESAN DIP

1 (10 oz) box frozen chopped spinach, thawed and squeezed dry
1 cup mayonnaise (do not use salad dressing)
1 (3 oz) pkg cream cheese, softened
1 small onion , chopped
1 large garlic cloves, minced (garlic lovers use more)
1 1/4 cups freshly grated Parmesan cheese, divided
1/2 tsp fresh ground black pepper, or to taste
1/8 tsp cayenne pepper, or to taste
1/2 tsp paprika
2 French baguettes, thinly sliced (purchased the long thin baguettes)
Preheat oven to 350. Grease a 1-quart casserole dish.
In a bowl combine the mayonnaise with cream cheese, onion, garlic, 1 cup Parmesan cheese, black pepper and cayenne pepper; mix until thoroughly blended and smooth. Mix in the spinach until combined. Transfer to baking dish. Sprinkle 1/4 cup Parmesan cheese and paprika over the top. Bake for 25-30 minutes. Serve hot to spread on baguette slices.
